Best dessert

So this has to be my favourite desert at the mo, it’s on my menu choice & it’s so easy!
I think the difference is in how the pastry is prepared, it’s cooked blind but brushed with melted butter & then sprinkled with caster sugar & cinnamon . When it’s cooled you simply layer with your favourite topping.
I’ve made it two ways, one with whipped cream, fresh strawberries & chopped mixed nuts, the second as recipe below.

375g ready rolled puff pastry
Spread
25g melted butter
2tbl caster sugar
1tbl ground cinnamon
Over pastry
Bake for 15-20 mins 220 c fan 200 c gas7
Leave to cool
Topping
Whisk together
250g ricotta
125g mascarpone
Pinch of cinnamon
2tbl caster sugar
Spread over pastry
Then top with
350g cherries ( frozen or from a jar )
2 tbl honey
Sprinkle with toasted almonds

Try it ! It looks impressive & tastes divine

Delicious everyone loved it and so easy to make.will definitely make this again, maybe try it with apricots for a change.
